
The Aztec word for “smoke” gives this pepper its name. The chipotle (chee POAT lay) is a red, ripe red jalapeño pepper than has been dried and specially smoked over firewood. This gives it a special flavor without diminishing its spiciness. Chipotle adds a piquant, smoky flavor to all types of dishes.
