Our Chef

The dishes I create and design reflect the enhancement of the individual ingredients I choose to transform natural, fresh, Costa Rican products with a non traditional preparation method. Many of our dishes are traditional Costa Rican recipes that we have taken to the next level using contemporary techniques. We can guarantee our customers and visitors absolute satisfaction from beginning to end in their dining experience with us,

Costa Rican by birth, and passionate about creating character for each of his recipes and dishes, is how Chef Juan Jose Rodriguez Campos, reveals his experience as the Executive Chef of the Don Prospero Restaurant at Café Britt.

His wide-ranging understanding echoes his familiarity with the finest quality hotels where he has practiced his art throughout the Central Valley in Costa Rica. We are lucky to have Juan Jose join the Café Britt family to share his immeasurable gastronomic know-how with us.

Due to his winning attitude, and belief that creative growth comes through participating in national and international culinary competitions. In 2002 Juan Jose took part in a culinary competition by invitation only for chefs by INA, or Instituto Nacional de Aprendizaje, which took place in Mexico. He was selected as the most promising national participant, and won his first gold medal, at a Latin American ranking.

The following year Juan Jose was selected to receive one of two scholarships offered by the John Flose Culinary Institute at Nicholls State University, Thibodaux, Louisiana, where he gladly accepted the challenge to study with some of the finest teachers in culinary arts.

At present, along with his active participation as Executive Chef at Café Britt, our chef competes at the Central American level with other prestigious chefs and as a result seeks to become a Culinary Master in the very near future.
